In many ways, Dark Souls 3 is the easiest Dark Souls game because FromSoft had ironed out many of the little problems from previous entries. Combat in that game is far more polished and faster than it was in Dark Souls and Dark Souls 2.

None of them were difficult to 100%, but all were very time-consuming. Would I recommend completion of the entire Dark Souls trilogy? Only to the most hardcore of nerds with plenty of free time. However, DS1 isn't that bad and has the least tedious farming, so I'd recommend 100%ing it the most of the three.

There are two major mods that offer a reduction in difficulty across the board by altering enemy health and damage values for the first and last Souls games made by the same creator: Dark Souls 3 Easy Mode and Dark Souls Easy Mode.
Imagine having a grappling hook, unlimited stamina and increased running speed in souls and they also seem not that long. Yeah sekiro could need one or two more areas. All souls games are very short including Sekiro when you run through the arenas. But when you collect items and fight enemies they get much longer.

Though it seems a bit odd to begin at the ending I would say Dark Souls 3 is the one to start with. It is probobly the best of them, at least in my opinion, and the most accessible in terms of understanding its mechanics.

Lobos JR is indeed the best player of Dark Souls. Here's a video of him doing a “randomizer” run. That is, his gear is constantly changing, even to things he cannot wield without proper stats. Lobos jr is a challenge runner.
This game should be 12+ or 9+. The media takes violence too seriously. You are killing demons as an undead knight. I know that tat might leave a bitter taste in your mouth, but if your kid is set on getting this game and is 12 and older at least 9 then it should be fine.
It's pretty safe to say that Elden Ring is a tough game. Frequent ambushes and enemies that can kill you with a single hit can make the first few hours very difficult.
While it is still a difficult game, Demon's Souls is by far the easiest FromSoftware Souls-like game to date. The combat is much simpler, more forgiving, and more straightforward compared to the later titles. Its main hurdle is if you struggle to fully comprehend its World Tendency mechanic.

Dark Souls is extremely hard from the get-go, even through its "tutorial" stage, because it doesn't hold your hand and it makes you loop, sometimes maddeningly, through areas you've already completed before. You also can't truly pause.
The ability for new players to explore and tackle the game in the style that suits them best makes this the most accessible Souls-like game to date, and arguably one of the best gaming experiences of the last few years.
